Life is all about change ,right????

So hold on to your hats because I’m changing again.

Try to keep up! At least that is how I feel. I was so dedicated to my Veganism, thought that I was on the best diet for the planet and now….

Turns out that I am a lot more affected by gluten than I thought. I have had to change my whole way of eating. Yes, now I am eating eggs and meat along with my salad and some veges. Who knew that rice has gluten??? and oatmeal too… two of my staples while being a vegan. And I also had a bit too much oxalates which is mostly present in beans and a whole lot of other plants that I ate regularly. They really should talk more abut these pitfalls in the vegan world. I guess I feel like I have been blindsided. I study daily about nutrition, listen to all the big guys in the vegan world. No one mentioned anything about all this.

The way I found out was “by chance”. I started watching a functional Doctor by the name of Dr. Osborne. I knew I couldn’t eat corn two days in a row or I would get a really bad headache and I also knew I couldn’t eat bread for the same reason. What I didn’t know were the terrible consequences if you didn’t deal with the situation and kept eating the offenders. Listening to Dr. Osborne the list of offenders grew and grew! Whether I have gluten sensitivity or full blown Celiac remains to be tested.

Dr. Osborne is very knowledgeable, I have spoken to him personally and feel confident that with his guidance I will be able to rebuild my system and be truly healthy, thank you God!
